Deep-fry

Thermal StabilityOils oxidise when heated, so it is necessary to select oil types with good oxidation stability, especially for processed foods.Oil DrainageDeep-fried food is more appetising when fried crispy. It is important to use an oil that drains well.‘Umami’Oils are rich in flavour and has ‘umami’. It is important to select suitable oil type to add more flavour and richness to deep-fried products to make the most of the natural flavour of the ingredients.

Mould release (Stir-fry and mould)

Coating

For cooking riceAdding a small amount of oil when cooking rice gives the rice a glossy finish and reduces dryness. It also improves mould release and yield.

Seasoning / flavouring

Oils and fats also help to soften flavours and smooth the palate. They can add flavour and richness to salads and boiled vegetables.
NOTE: For those who are not fond of raw vegetables, vegetable contains fibres and are rich in minerals and vitamins.

It is rich in alpha-linolenic acid, which is becoming popular of its health promotion properties, and has excellent absorption and combustion properties. It is light and ideal for using in dressings and other raw foods.

Chia seed

One of the superfoods that is gaining increasing attention. This oil is rich in alpha-linolenic acid which is one of the omega-3 fatty acid.

Almond

Rich in vitamin E. It is also rich in oleic acid, full-flavoured but pleasant in taste. It enhances the quality of ingredients.

Rapeseed

Light-flavour with high thermal stability characteristics.

Corn

An oil made from corn embryo bud, which has a savoury flavour. It is suitable for deep-fry, mayonnaise, dressing, and etc.

Soybean

It is a robust oil with a distinctive richness and umami flavour.

Evening primrose

This oil contains high levels of γ-linolenic acid, which is said to help with female menopause and allergy suppression.

Sesame

This oil has a rich flavour and full-body characteristics of sesame. Its rich aroma is best with Japanese and Chinese cuisine.

Flaxseed

This oil contains alpha-linolenic acid, an omega-3 fatty acid which has health promoting characteristics.

Camellia sinensis

This oil contains more oleic acid than olive oil, has excellent oxidation stability and is best with all types of cooking, such as stir-fry, deep-fry and dressing.

Peanut

An aromatic oil with a distinctive savoury flavour.

Macadamia

It is odourless and testeless, but has rich flavour. It contains palmitoleic acid, an oil that has similar fat composition to that of human sebum, and is often used in cosmetics.
■ Main use are for industrial purposes and moisturisers (cosmetics).

Pumpkin seed

It has a distinctive deep green oil with a rich, full-bodied flavour. It contains carotene and zinc which is said to be effective against prostate and circulatory diseases.

Palm

Very light in flavour. It has excellent heating and storage stability.

Olive

This oil is extracted from olives. It has distinctive flavour and is widely used in Italian cuisine. It is high in oleic acid and is one of the healthy oils to consume.

Moringa

This oil has the most oxidation stability compared with all vegetable oils.

Sunflower seed

It is rich in vitamin E and oleic acid, with excellent oxidation stability and a dry finish.
