    We cannot live without oil in our modern living. But too much oil or old, oxidised oil is not good for you.
    Also, even though oils have the same calories, they have different functions depending on the type of oil. The reason why they have the same calories but different properties is because of the different types of fatty acids that constitutes the oil. It is important to know the differences in the fatty acids that constitutes the oil and to choose oil wisely. qa_img Of the unsaturated fatty acids, omega-3 and omega-6 fatty acids are considered ‘essential fatty acids’.
    These two essential fatty acids cannot be produced in the body and must therefore be taken from food. In such cases, the food from which essential fatty acids can be efficiently ingested is oil.

    えごま and blue-backed fish are food sources of omega-3 fatty acids. Blue-backed fish, which always served in the traditional Japanese diet, is still an important food for the body. The DHA and EPA in blue-backed fish are omega-3 fatty acids.
    Speaking of which, have you heard of 「えごま」? It is a member of perilla family, and its leaves are similar to Japanese green shiso. The alpa-linolenic acid abundantly contained in えごま is partly converted to DHA and EPA in the body. It was acutally OTA OIL that first produced えごま油 for consumption in Japan!

    The three main sources of energy are carbohydrates, proteins and fats. Carbohydrates and proteins provide 4 kcal of energy per gram, whereas fats provide 9 kcal. Oils and fats are efficient source of energy, providing high energy in small amounts.
